Case History: Mitesh, a working professional, had a hectic schedule at work. He was struggling with losing weight and was facing insulin resistance. His reports detected a high lipid profile, severely low platelet count, and showed signs of fatty liver. We asked him for an ultrasound, and he was diagnosed with Grade 2 fatty liver. His blood reports showed slightly high GGT, depicting that the excess fat is stored in the liver. After analysing his diet history, we saw that he ate incorrect foods and that his timings were erratic. The foods were simple carbohydrate-rich, causing insulin spikes in the body. He did not have optimum protein and fibre intake while consuming high glycaemic load food, which caused excess glycogen stores and fat stores in the body. To treat the fatty liver, dietary intervention was the best solution. Hence, in the first phase, we focused on giving him nutrition education regarding foods and liver health. It was essential to limit fat consumption. Hence, we gave him lighter vegetarian protein sources such as tofu, hung curd, whole moong, legumes and pulses. We followed a targeted approach and ensured he followed everything well to bring down his liver profile. We gave him green rotis, salads, and soups to meet his vegetable intake. Good quality, easy-to-digest protein, like sprouts fish, were combined with brown rice for optimum fibre intake. After 45 days, his parameters decreased significantly, and he lost 9 kg of weight. For the second phase, we modified his diet and gave him his favourite foods. We incorporated a balanced diet, which helped him sustain and maintain the diet. Three meals a day and one snack, if required, are given. Time-restricted eating was taught. Results:

His HbA1c levels dropped from 6.8 to 6; triglyceride levels reached 131 from 160 mg/dl in just one month. There was a significant drop in GGT levels from 96 to 55.
